This specially crafted flour blend of type “0” wheat flour, rice flour, soy flour, and dried wheat sourdough allows for higher water absorption than conventional flour. The result: a dough that is crispy on the outside and wonderfully airy on the inside.
Perfect for long fermentation times from 24 to 120 hours and ideal for baking on a pizza stone or refractory baking surface.
💡 Pro Tip: For the best results, use cold water and let the dough slowly mature in the fridge – this creates optimal flavour and texture.
