At Latteria Sorrentina, the Fiordilatte di Napoli mozzarella is THE premium product in the range. The artisan processing of milk collected from the stables and pastures of Campania is the absolute speciality of Fiordilatte di Napoli.
Latteria Sorrentina's Fiordilatte di Napoli, which is used to bake pizzas, does not have the problem of excess whey escaping during baking due to the high quality of the product and the high temperatures in the ovens.
Latteria Sorrentina is approved as a certified supplier by AVPN, Associazione Verace Pizza Napoletana (engl. "Association of Genuine Neapolitan Pizza").
Mozzarella can easily be frozen as a whole package (with liquid) or portioned (without liquid).
- Place in the freezer in the original packaging or cut the mozzarella into slices and freeze on some baking paper. Once the slices are firm, they can be packed in a freezer bag.
- To defrost, place the cheese in the fridge overnight. Do not defrost in the microwave, the cheese will become tough and bland.
- Shelf life: up to six months.
- Frozen, it is good grated over pizza or gratin.
- After defrosting, however, the consistency changes, making the cheese more suitable for cooking and baking.
