It forms a golden rind during aging, the cheese itself is light in colour and very compact for a fresh cheese, as it has a short aging time. The Scamorza has a fat content of about 40 % to 50 % in the dry matter and is also sold as a smoked (Italian affumicata) cheese in addition to the normal version.
Scamorza can be eaten in its natural state and, like mozzarella, it can be used as a topping for pizza, au gratin and lasagne. It has a nice compactness and smells of fresh milk and yoghurt with a hint of acacia honey. Excellent for gratinating or cutting into pieces and for pizza or salads. It goes well with white wines, preferably from the south, such as Fiano and Greco. Also with sparkling wines such as Valdobbiadene Prosecco.
