Ricotta Torretta is a typical Pugliese sheep's cheese, which takes its name from its truncated cone shape, reminiscent of the famous trulli, the typical buildings in Puglia, where this ricotta is produced for grating by Marte Formaggi in the province of Bari. 

It is a compact but crumbly cheese, ivory-white in colour, with a short ripening period of no more than 20 days; externally, this cheese is white or slightly straw-coloured and has a reticulated texture.  

Its flavour is aromatic, intense and strong, typical of sheep's milk cheeses. Ricotta Torretta is salted during processing and thus differs from the typical fresh and crumbly ricotta. The seasoning and salting make the ricotta less perishable and enhance its flavour.  

Ricotta Torretta is a ricotta typically used for grating, but is also excellent as a table cheese. 

It has always been used by shepherds to flavour orecchiette or frise and friselle, which are marinated in olive oil and fresh cherry tomatoes. 

This ricotta for grating is excellent for enhancing many traditional Apulian dishes, but not only: being salty and very aromatic, it is also perfect for enhancing pasta dishes, lasagne, ravioli or crepes. 

But it is also surprising when it adds a touch of flavour to cooked vegetables, for example with friarelli or dandelion to make them less bitter.
