A jewel of fine food, with a rich and complex taste, slightly spicy, and a history that goes back to the time of the Roman Empire. 

This cheese has been protected in Italy as a PDO (Denominazione d'Origine Protetta) since 1955 and throughout the EU as a PDO (Protected Designation of Origin) since 1996. It may only be produced in Lazio, Sardinia (the largest part) and in the province of Grosseto, and only with milk and rennet from local herds.

It is produced in large loaves of more than 20 kg. It has a smooth, yellowish-white rind and bears the Consortium's quality mark, which guarantees its origin and careful production. The paste is white, hard and compact. The aroma is rich and full, even when cut or grated, the taste is intense, spicy and tends to be salty.

Pecorino Romano is an important ingredient in traditional recipes, such as spaghetti cacio e pepe, spaghetti all'Amatriciana or pesto making. It is simple but noble and authentic: delicious grated or eaten in pieces with raw vegetables. Thanks to its long maturation, it is naturally lactose-free. 

Pecorino Romano is considered one of the oldest cheeses in the world. The Roman writer Lucius Iunius Moderatus Columella (? - 70 AD) already described the production of Pecorino Romano in his "De re rustica" (full title: "rei rusticae libri duodecim"), a 13-volume guidebook on how to run a farm. These methods of making Pecorino Roman have not changed to this day. Columella also wrote that "this kind of cheese could reach beyond the sea". So Pecorino Romano was exported and shipped across the Mediterranean even in ancient times.
