A spicy version of brigante. The cheese is fresh and tender and studded with tiny, fragrant chilli pieces. It is a young cheese that is aged in 20-25 days and made only from whole sheep's milk from the pastures of Sardinia. It has a light yellow, ribbed rind. The paste is cream-coloured with small red chilli dots and slight pitting.
This is a special cheese with a spicy taste and aroma. It can really make a toast or sandwich special. Delicious in fresh salads or as an accompaniment to crostini, pane carasau or other tasty baked goods and savoury snacks for an aperitif or appetiser.
