Product information "Gorgonzola dolce DOP"
Gorgonzola is a straw-yellow cheese made from raw paste, whose green veins of mould are due to the ripening process, i.e. mould growth. 

The cheese is creamy and soft, has a special and peculiar taste. The mild Gorgonzola dolce is slightly spicy, whereas the spicier Gorgonzola piccante has a more decisive and stronger flavour with a riper, more compact and crumbly paste. 

To best enjoy the creaminess of Gorgonzola dolce, it should be taken out of the refrigerator at least half an hour before consumption. 

Both products are made with pastorised milk from the cowsheds in the areas of origin, to which lactic acid bacteria and selected noble moulds are added, which then give the cheese its typical veins of mould. 

The maturation of Gorgonzola dolce takes at least 50 days and over 80 days for Gorgonzola piccante.
