Matured Asiago is a aromatic semi-hard cheese with a distinctive character. When chewed, its flavour unfolds in an explosion of aromas. Asiago Mezano (medium aged) has a maturing period of 4-6 months. 44% fat in dry matter - Origin Friuli - Venezia Giulia 

Asiago also Asiago d'Allevo is a north-eastern Italian cheese with a protected designation of origin.

Taste 
Asiago has a smooth thin elastic rind of yellowish grey colour and a light straw-coloured paste with many small holes. The rather soft cheese tastes pleasantly mildly spicy with a nutty and slightly lemony aroma. Older Asiago is harder and more compact and develops a slightly acidic aroma.

History 
Cheese has been produced on the Asiago plateau for over a thousand years. In the past, the milk was mainly supplied by sheep. The Asagio type has been known since the Middle Ages.

Varieties 
There are two very different main types: The artisan Asagio d'Allevo ( stagionato ) made from raw milk has the smaller but more sought-after share of the total production (about 25%). It comes in three levels depending on the maturing time: Mezzano (min. 6 months) Vecchio (over one year) and Stravecchio (over two years). When young, it tastes mild and creamy-sweet, but as it ages, it becomes increasingly spicy and pronouncedly strong. Asiago pressato (fresco), or pressato for short, accounts for 75% of production and is a commercial form from large cheese dairies in Veneto that is widely exported. This cheese is made from pasteurised whole milk and has a higher fat content. It is pressed to speed up the ripening process and is ready for the market after about four weeks. It has a soft paste and a mild taste, which appeals more to lovers of young, indifferent cheeses.
