The vegetables that make up this dried Antipasti are grown in iContadini's open fields from April to May, and harvested by hand from June to September. They are washed, selected, cut into layers and left to dry on frames for 3-4 days.
Today, iContadini still carries out all the operations in-house and manually, as iContadini's grandfather taught them and as iContadini hopes to teach their children. This is the only way to respect tradition and preserve the great qualities of Salento products.

- pitted 'Leccina' olives

- unrefined sea-salt
