Product information "Taleggio DOP"
It is made from the best milk in Lombardy according to an ancient tradition and is undoubtedly a first-class product aimed at the most demanding consumers.
It is a D.O.P. soft cheese made from whole cow's milk.
It is ready to eat after about 60 days of ripening in pine boxes at a temperature of 5 °C and a humidity of 95 %. The rind is smooth, soft, thin and rosy yellow in colour.
The dough is white, slightly straw-yellow, without holes, quite firm and slightly crumbly in the centre. Delicate and fragrant taste.
Taleggio DOP is a cheese that goes perfectly with any vegetable, especially grilled and steamed vegetables used in various dishes such as lasagne, vegetable strudel, flan and pies. Tallegio is good as the end of a meal, where it can be served with fig mustard or fruit and walnut bread. It is also excellent as a snack with bitter salads such as radicchio or rocket, fully ripe tomatoes or as an additional flavouring on bruschetta with courgettes and sage. Since Taleggio melts quite well, it is also often used in warm cuisine, for example in risotto or on polenta.
