Scamorza is an Italian cow's milk cheese, it belongs to the scalded cheese types of filata (like mozzarella, caciocavollo and provolone) . Typical of this cheese from central and southern Italy is its pear shape.
Like all filata varieties, the fresh curd of the scamorza is scalded with 80 °C hot water. The hot mass is stirred to form a soft and malleable dough. Then uniform pieces are separated. The scamorza is shaped into a plait or into its typical pear shape and then placed in a cold water bath to cool and then in a brine for natural preservation. The longer the cheese is in the brine bath, the more salted it is. Maturation takes place in conjunction with smoke produced by fine fir or maple wood.
It forms a golden rind during the ripening process, the cheese itself is light in colour and very compact for a fresh cheese, as it has a short ripening period. It has a fat content of about 40 % to 50 % in the dry matter and is sold as a normal cheese in addition to the smoked version.
The cheese can be eaten unprocessed, but it can also be prepared fried and stuffed. Furthermore, like mozzarella, it is suitable as a topping for pizza, for gratinating and for lasagne. Very good as a starter, for warm sandwiches, for garnishing vegetables and for stuffing aubergines. With wine such as Lagrein and other lightly aromatic white wines. Excellent also with Prosecco from Valdobbiadene.
