Bake your pizzas and breads with Lievito Madre - active dry mother yeast - instead of yeast. Fermented wheat germ, i.e. the innermost part of the grain, wich is particularly rich in nutrients, creates the active sourdough culture. Ruggeri's Lievito Madre is used instead of brewer's yeast when baking at home and is suitable for all types of bread, pizza and focaccia. One of the main advantages is the development of a special taste and aroma in the final product, typical of yeast products made from fresh sourdough. It also increases the baking properties of the flour and makes the dough easier to work and softer.
This mother yeast is indeed easy to use: If you need yeast for a recipe, replace it with the mother yeast at 10% of the weight of the flour and add it directly to the flour
