The Brigante in a different version with pepper. It is made only with whole sheep's milk from the pastures of Sardinia. The paste is fresh and delicate, peppered with grains of black pepper. It is a young cheese that matures in 20-25 days. It has a light yellow, ribbed rind. The paste is cream-coloured with slight pitting. The black peppercorns give it flavour and aroma.
The taste is both fresh and spicy. It tastes delicious in fresh salads or melted on a bruschetta. It goes perfectly with crostini, pane carasau or other savoury pastries and savoury snacks as an aperitif or with appetisers.
